The new partnership will be led by Chef El Jefe Colman in collaboration with Chef Timothy Gonzales. The announcement follows confirmation that Beards & Bellies, the venue’s current food provider, will conclude service on January 31 after deciding not to renew its lease.

“We’re incredibly grateful for our time working with Beards & Bellies and truly appreciate the creativity, professionalism, and care they brought to our kitchen. We wish them nothing but continued success in their next chapter,” said ownership at The Well Covington.

According to the company, El Jefe’s Cubanos & More was selected after ownership evaluated the culinary approach and guest experience associated with the concept.

“The first time we tried Chef El Jefe’s food, we were completely blown away. It wasn’t just the rich and vibrant flavors of Cuba—it was the energy behind the food. You can feel the passion, pride, and excitement in every dish, and that kind of energy is exactly what we want in our kitchen and for our guests,” said ownership at The Well Covington.

The new food program will feature Cuban and Caribbean-inspired offerings, including authentic Cuban sandwiches, Miami-style Cubano bread, mojo-marinated pork, Caribbean street food, smoked wings, tacos, and house-made sauces. All dishes will be prepared using scratch cooking methods.

Colman is the founder of El Jefe’s Cubanos & More and is known for focusing on traditional Cuban techniques and house-made components. Gonzales brings more than 25 years of culinary experience and operates All Around The World Cuisine, a catering and food operations company based in Cincinnati. He also provides food service operations for multiple hospitality venues and serves as a private chef to MLB pitcher Bronson Arroyo.
